Intel/AMD is matter of personal preference. I've used AMD in the past, but my last few builds have been Intel.

As for video editing in general: 1) the faster the cpu, the faster processing will take, 2) depending on your OS version, software, and file sizes, more RAM can be beneficial, 3) HDD speed is important is all files are read from and written to the HDD. And for best results, 2 or 3 HDD's will increase speeds. At a minimum, use a 2 HDD configuration. One HDD for the OS/software, and one for the video files. A 3 HDD configuration would have a drive for the OS/software, one drive from which the files are read, and the third drive is where the files are written.
