Understanding scanner resolution

I have a CanoScan LiDE 110. I've done some reading but am still confused about input and output resolution, at least in the context of using this printer and its software.

This scanner is described as having the capability of scanning at up to 2400 dpi. But using the provided Canon MP Navigator EX, the top resolution available in a pull-down menu is 600 dpi.

If I open the scanner driver software, under the Advanced Mode tab, I can set the output resolution up to 19,200 dpi. I understand that output of higher than 2400 is only interpolated. But if I set the output to, say, 2400, is the scanner then scanning at 2400, or still at 600 and just outputting an interpolated 2400?

From the specs:

Optical:Optical: 2400 x 4800 dpi Interpolated: 19,200 x 19,200 dpi

In other words, it will scan at 2400 x 4800 without interpolation.
