Hi and Welcome to TSF :)

Im not at my xbox right now so I might not be of great help here but it seems that stopping sound from coming out through the tv could be quite difficult. A couple of sight recommend stripping down the casing of your composite cable to allow it to be used along side your HDMI. One of the guys on this site has done this successfully before so I will pm him and direct him here.

Here is an article on the turtle beach website detailing the procedure : HDMI - HDMI port on Xbox 360 is blocked - Turtle Beach :: Knowledgebase

The alternative and easiest way I can see this being done is to simply use composite cables (for audio and video) if that it is at all possible, otherwise alot of effort will be required to get the sound to come out of the turtle beaches exclusively. The video quality reduction will be negligible and your audio setup will be far simpler.
