I have a user that tends to use remote desktop to connect from his work computer to his home computer. His use of this feature seems excessive. I suspect he may be running some kind of home business from work. Is there an easy way to track his usage of the remote desktop program, or take it one step further and check up on what he's doing through the connection?

Yep, there most certainly is.
You can use MS Port Reporter to track what IP Remote Desktop connects to, who initiated it, when it started, when it ended, and so on.
Click here for a full run-down on how to use Port Reporter.
