Here's something you folks could help me out with - the backup drive called the - Seagate 1TB Freeagent GoFlex 3.5" External Hard Drive --- is this a unit that backs up just certain files on a hard drive, OR is it one that can back up the total hard drive.

The drive can be used for anything. Backup is handled via software and should be user defineable (though I've not used it).

It's difficult to find out from anything on Seagates sites, as to whether it does actually back up the whole hard drive or just certain files.
Clickfree has two types of backup drives - one that does only certain files - the C2 model and the C6 model, which latter does the whole hard drive.

So I'm going to take it from your posting that Seagate CAN indeed do the whole hard drive.
