Sata Raid Configurations

Have 2 500GB WD hard drives, 1 750GB WD hard drive. I would like to use the 2 500GB HD in 0 Raid config, giving me 1TB HD space. I am unclear how to use 750GB HD slave for backup. Can this be done ?
