whenever I select hibernate it just stays on

I have googled it, and unchecked the quick start up because apparently it's a common thing with HP laptops upon the windows 10 upgrade.. it was hibernating as normal..

but after a few days, it went back and no longer hibernates when I select it to.

Also the fan is very loud with this computer, any advice or suggestions would be much appreciated.

I believe that you need to also upgrade the drivers and BIOS usually when upgrading like that. Check the manufacturers website for any updated drivers for your model.
The symptom I have is that hibernating by any means (lid sw, power button, power menu) acts just like logging off.

I spent about 4 hours with HP support upgrading all drivers, installing the latest BIOS etc. and hibernate still doesn't work properly. After all that the tech said that my Probook 4520s is "too old" and not compatible with Windows 10. according to him HP has no plans to provide a fix (which would likely be a BIOS update).

That sure does sound like a Bios issue and in my experience HP is probably the worst at providing meaningful drivers and bios updates on older hardware. It's one of the reasons I personally seldom recommend their products.

I had a similar experience with a perfectly functional laser printer. When Win7 came out HP decided not to bother with providing a working driver for this printer family. I had been planning to upgrade my laptop to the latest from HP but think I'm done buying HP products now.

Their motherboards are among the poorest quality and they don't compromise at all on warranty dates so good move. I also had my favorite HP Laser printer go down after XP with no new drivers and it really got to me.
