Some programs & toolbars can cause this to happen. Google has a preference setting that "protects" it as the default homepage (which causes it to be reset to Google if you change it to something else). The "help" files for the Google Toolbar should have the info on which preference setting you can change to fix that. I think some versions of AOL operate similiarly.
Anti-spyware programs can have such preference settings, too (they will "lock" or "protect" the homepage that is in place when they are installed ... SpyBot has such an option: I'm sure there are others as well).
Have a look in on that.
Also, run some "thorough" anti-malware scans, as malware (especially spy-ware "search" programs) can also have this same effect.
