Been happening ever since I upgraded to Windows 10. This is a desktop so no chance of it being related to laptop software. The option is off in Power Management.

Intel(R) Core(TM) i7-4790K CPU @ 4.00GHz
AMD Radeon R9 200 Series
Microsoft Windows 10 (build 10240), 64-bit
I tried looking for a setting in Catalyst Control Center, but I didn't find anything after searching "adaptive brightness".
This is driving me nuts because it dims at any time that the view gets dark, be it video games, movies or even backgrounds.

I'll check, however this ASUS BIOS is a little different. It's a little similar to

Any idea where I might look?

It may not have the option at all.

Where did you get your copy of Windows from? It's strange that it would enable it on a desktop PC.
