Your old hard drive will be recognised as a hard drive, but windows 7 wont be able to use it, as the windows drivers were for your last computer, so the motherboard chipset, sound , LAN, and graphics card were all set for your last system.
If you have a spare hard drive back up all your own data first, then connect it to your computer.
It may work with a default display resolution but will then probably complain about the sound hardware, lan, chipset etc. You may be able to load these drivers from your install disks.

another issue would be that that since you replaced the motherboard, windows will state that it is not a genuine copy, so you will have to back up data, and reinstall.

Well that depends on the version, the previus posters are assuming it's an oem copy. If it is then the answer is no, but if it's a retail and says so then yes you can, Your motherboard should have an ide port on it as with sata ports. To use the retail version again you will need to do a repair install of the os.

It's like buying a lottery ticket, you win some and you loose some.
I have replaced a motherboard on a number of occasions and windows 7 just booted up and installed all the necessary drivers without a hitch, but i have also had to hunt around and find drivers.
Just give it a go and see what happens you won't damage anything.

Why don't you give us the mobo make/model and let us see what ports and controllers it is equipped with. A cable converter from IDE to SATA does just that. It converts the connection. I see no issue at this point, but you didnt give us all the specs of the system being built.
