So I have it all fixed up now and I've been looking at the car and noticed a few things I have questions on and was hoping for some help

By the fuse box near your feet on the drivers side it has a winter and a summer plug in port, what does this do?

Are the fuel economy, temp gauges in the middle of the dashboard actually accurate?

What does the symbol that looks like a car with an arrow in it do?

If I remember correctly Winter/summer plug is for your windshield wipers.
In the Summer setting they "park" below the hood. Winter, parks them above the hood.

If you live in an area with ice/snow change it to winter.

If I remember correctly the car with the arrow is a indicator that something is wrong.
eg. tail light out.

As for the guages they should be fairly accurate.
The fuel economy guage is essentially a vacumn guage. The harder you step on the gas the less vacumn and thus less milage per gallon.
