I recently updated my Mac to macOS Catalina 10.15.1 and now many of my Apps are no longer compatible. Including iPhoto, Skype and several others. There does not seem to be updates for these apps and I would prefer to revert back to the previous OS. How can I do this?

Apple has decided that their new OS 10.15 Catalina will no longer support 32 bit programs. Leaving a lot of users favorite programs in the dust.
So, before you upgrade, read these articles first.

I wasn't necessarily answering the OP's question, just giving information related to that question for other users about to be in this situation
