RAID 5 will continue to operate with one drive failure. With 2 drive failures, depending on the nature of the problem, it may be possible to recover your data but it will not be a simple process. Professional data recovery from RAID 5 is complex and expensive.
You must understand that RAID in any form is not a substitute for having current backups. The purpose of RAID (except RAID 0) is to provide continuing access to your data in the event of a single drive failure, not to protect your data. That's what backups are for. There are other causes of data loss other than drive failure and RAID will provide no protection from them.
