Help on implementing QoS

Hello all,

I have to implement QoS on the Wan where i work, the wan goes all across Canada. i have done a lot of reading about QoS so i have not so bad knowledge of QoS. This post might be a little long but i want it to be as clear as possible.

First, here's how we're planning to implement QoS. Our ISP has 4 class possible. Multimedia, bursty-high, bursty-low and best-effort. We're gonna stick to this classification. Multimedia is for VoIP and Video, currently there is little VoIP going on and i was told to not consider the multimedia class, maybe later i will but i focus on the Data trafic type.

So that leaves us with bursty-high, bursty-low and best-effort. In bursty-high we thought to put all the most critical business apps in that category. The best-effort class would contain all unwanted traffic like Peer-2-peer. and all other bussiness related but not critical apps would be in bursty-low. so this our base QoS plan, if someones sees something wrong with it, tell me.

I made up a list of all the business applications, so these are the ones that we're interrested in giving priority network access. everything thats not on that list is gonna be best-effort. also, this apps list doesnt contain any Lan apps (hope so), i talked with our Network architect for this.

My main question is how can i know for sure what application generates what trafic. because, if i'm correct, we're gonna identify them for QoS by
Ip source/dest and/or ports source/dest. I'm currently using Ntop but that doesn't help me much, it shows trafic protocol but i cant really drill down to know for sure wich app its from. my ntop is in promiscuous mode at the Wan entry point of the main site, so i get all trafic coming in and out.

i'm gonna stop it there, i hope i made my situation clear, else please let me know i'll try to be more specific, also i'm french so maybe my english dont help me beeing clear :P
