Network Utilization 100/F v 1000/F

I work on a very large production network. I am wondering the true differences between 100/F and 1000/F in terms of network utilization. Is there any reason, if you have the capability, to use 100/F besides software specifications.

If you have gigabit all around, there's no reason I can see not to use it. However, unless your network is properly designed, you could create a bottleneck somewhere if you have a couple of bandwidth hogs. One issue could be server access if a large number of workstations have gigabit access and are saturating their links.
