Instead of Dual boot, you may try Virtual PC from Microsoft, it's FREE, then you may install Windows Server 2008 R2 --> http://www.microsoft.com/windows/vir.../download.aspx
Just make sure that you'll enough RAM in your computer to run Virtual PC for the Win Server 2008R2
