Have you tried the speaker wizard in nvidia mixer?
MP3s are mono or stereo so you won't get the full 6.1 effect, but you can get media player plugins to create virtual surround sound.

The nvidia mixer is software that comes with nvidia sound cards. There's a setup wizard for different speaker configurations.

You can get winamp plugins that simulate surround sound for MP3s. I don't know how effective they are with 6.1 speakers, they're mostly aimed at stereo speakers. http://winamp.com/plugins/browse.php?ctype=P&category=5

Try playing a DVD with 6.1 sound. At least then you'll know if your speakers are setup right. I think MP3s only use 2 speakers, but I could be wrong.
