partitioning 500gb HD

I have a 5 year old Dell XPS Generation 4,with Pentium 4, XP professional, Raid 0; the hard drive has seen better days and I have bought 2 WD 500 gb SATA drives as replacements. All I know is I do not want to go back with a Raid 0 again. 1. So would it be better to go back with Raid 1,or just install OS, programs on 1 HD then use the second for data, I have alot of music and pictures I would like to save? 2. Best way to partition 500gb HD? The installation looks pretty staightforward but I don't know about the rest of it so any help would be appreciated.

I would keep the drives separate. Also, if you keep your "OS" and "storage" drives separate (ie: different HDD's), then I would simply partition each drive as a single partition. I have used multiple partitions on my HDD's for years now since drives have gotten cheap.
