Also, can I use DDR2 RAM in that mobo? What would be the performance difference?

DDR3 has some issues you may need to slow them down to get stability but for an AM3 build it's very nice and will run with the best of them.

Actually I missed it that is a DDR2 board so DDR3 won't fit in it.

What do you all think? Go DDR2 or DDR3? Price is a big factor for me. I'd like to keep this build under 700.

Tough spot AM3 should give you a future upgrade path, but DDR3 isn't as stable yet as DDR2.
