New build, need help picking RAM
This is my second time building a computer and after looking through parts for the past couple of days I've selected these so far:

Hard Drive: already have it Running Windows XP I'm going to be buying my my case and RAM at a local store. I'm not going to order my RAM since I don't want to risk having to RMA a dead set again. Since we're discussing RAM, how much difference is there between a 2GB stick of 800MHz DDR2 CL4 RAM and a 2GB stick of 1066 MHz DDR2 CL5 RAM? What is faster? Will it be noticeable in gaming? Is it worth the extra 20 euro at the store I will be buying it?

The 1066MHz RAM will be slightly faster, but not noticeable enough when gaming. You could overclock the 800MHz RAM, but it still wouldn't make much difference for games. And as Tyree says, a matched pair will always outperform a single stick.
