While the configuration for this isn't very user friendly, it is possible Pin anything to taskbar

When I get to actions > new What do I use? I want the file not a specific document? So would I use doc or windows system 32 or something else?

You can easily create a toolbar in the taskbar.

Just right-click on the taskbar --> Toolbars --> New Toolbar --> Add the My Documents folder.
