Does anyone know where I can get more info about using forms. I'm using the Steel Blue template. The forms feature is on the first page.

Just search Google for 'forms HTML' and you will get a fair few sites with information

I'm also using Web Easy 7 Pro and found the forms support poor. After designing a pretty good form, with alot of work, it only worked from some computers. According to their FAQs, their forms work with the e-mail configuration and program that the web site was designed on. That makes it pretty useless, unless you get a form-mailer script from your web host. Short of going to school, or reading a book to learn HTML, the support both from the web host and Avanquest was useless, and my web host said they don't provide tech support for 3rd party software. Go figure. I found some real help, at minimal cost from a company called Formlogix. http://www.formlogix.com/ Took some work, but their tech support is good and fast by e-mail.
