PSU install

I have never installed anything on a CPU before but I want to install a new power supply and GPU in my new CPU. Is this stupid for me to try to do on my own? I feel pretty confident on the GPU as it seems to be pretty easy but am a little worried about the PSU. Do you guys have any advice? Also, what should I do with the unsued wires? I do not have one of those ground wrist bands so what should I do to ground myself? I will be working on a kitchen table on a Pergo floor. Shoes, no shoes, what to touch or any other advice would be great.

Also does anyone have any guids to getting rid of extra junk on the CPU? I mean programs that start up with the computer and stuff I don't need running, that kind of stuff. I have windows Vista Home Premium. Also any advice for anti virus and that kind of stuff to run? Right now it had Norton which I hate.

Thanks for all you time.
