All of these will be fine to keep. Bare in mind that unless you have paid subscriptions then Ad-Aware and Ewido will be on demand scanners. Ewidos real-time protection and automatic update features will be disabled after the 30 day trial expires. Run scans regularly with these programs but remember to update them beforehand.
Spybot S&D Teatimer will provide realtime protection. If you read Tony's
"How did I get infected" you will find links for Spyware Blaster, IE Spyad and MVPS hosts which will secure you even further.
Remember to keep everything updated (including windows) to prevent any vulnerabilities being exploited.

I wouldn't advise disabling anti-virus protection while online unless need be i.e. while performing an online scan for example. Norton is known to be a resource hog so if this is a problem you could try an alternative anti-virus. Make sure you completely uninstall Norton first.
AVG is a very good free AV which may be better suited for you.
Remember if you uninstall Norton you will also need a seperate firewall
