I know that in the new Dell (ew...) XPS series, the graphics memory and chipset is upgradeable. In all laptops, you can swap CDC (if available), memory, hard drives, optical drives, magnetic drives (i.e. floppy/zip if available)and MiniPCI. There are few laptops who's processors can be removed an upgraded. In particular, they are expensive and indeed have drastically different power ratings. There are also separate power controllers on laptops' motherboards that control temp and whatnot that are likely tuned to a specific processor. Good luck on this one. Let me know if you find one that is decently upgradeable.
