Well the last Need for speed game I really like that had nice handling was Need for SPeed Porsche. I am waiting for NFS Shift. I think going the pro street way for this long wasn't a good idea.
I think you'll really need a dual core for Grid.

What you want to aim for is the recommended specs as publishers always pick too low of a minimum spec. They just want to sell the game and don't care too much if a computer can run it.
