Old emails transferred to new HDD?

I have thousands of emails I need to keep and I want to upgrade to a bigger HDD. The emails are in Outlook Express version 6 or 7 (how can one tell?) but NOT in ghastly new version 8!!! I'm using Win XP (SP3) and intend to put that on the new HDD too. I have bought the replacement HDD but it's still blank. I have a USB adapter for it if required so I can treat it temporarily as an external USB storage device if that helps.

When I once tried meddling with the O.E. email files via Win Explorer it caused terrifying havoc until I managed to restore everything exactly as it was, with OE either refusing to recognise that the folders I had touched still existed or else it claimed that they had no emails left within them!

I definitely do NOT want to copy ALL my settings and data to the new HDD as so much has become corrupted over the years. I need a fresh start!

Any certain help would be much appreciated, especially if in words of one syllable, no jargon, and targetted at a total idiot (me). Thanks in anticipation!
