You could go for an Antec Nine Hundred case (much better than the Centurion). Hm. Maybe go for a Radeon HD4890 or GeForce GTX275 over the 9800GTX+, though you don't have to. 750 watt PSU instead of the 650 (for the bigger GPU) but stay with Corsair or Antec or Seasonic. If you have any money left, go for the E8500 or possibly Q6600 or Q9550 instead of the E8400. I recommend the E8500 for better performance and overclockability now (and cheaper), and one of the quad-cores for a more future-proof rig. Also look into getting a Zalman 9500A or 9700 (if you plan to overclock) or similar aftermarket heatsink.

Pick and choose from those upgrades to match your budget. ;)
