Troubleshooting blue screen errors on a self-made system

I've been having problems with a system I built myself. When I use much of my PC's resourses (ie. any program more complex than Firefox or notepad) I wind up getting blue screen stop errors, and windows reboots itself. Often during the reboot, it blue screens before I can log back into Windows.

I read over the Microsoft STOP pages to troubleshoot the errors: many claimed I had hardware issues. I took my PC to a local repair shop and had them do a complete hardware check on my pc. They said that everything is A-OK. They ran my PC without errors for 4 days after a HD wipe and vista re-install. After I ran my pc for 2-3 hours and reinstalled a few programs (Elder Scrolls IV: Oblivion, Final Fantasy XI, Gamepad software, Mozilla Firefox, etc.) the torrential downpour of blue screens resumed.

Also, how to I configure windows to hold on the blue screen so that I can properly SEE my blue screen and write down the information it contains? I tried opening the dump files but to no avail.
