Hi,

This is a very ambitious project. I have two problems with it.
1: You are planning to install a Mac OS on a windows built computer. The main issue with that is by default you can't install a Mac OS on non-mac hardware. It is a breach in the EULA.

2: The other main thing is that Vista's Longhorn boot-loader doesn't play well with other.

As for your questions. The only one that I have an answer right now is that you will only need one swap partition, just make sure that it is about twice the size of your ram.
