In order to change trucks you have to go to your garage, in the city you first started. you can find it using your map. If you asined the truck that you want to one of your drivers you will have to end his contract. and im not sure you may have to have it transported to your garage. If you like the truck you are driving you can change the color at a service point, it is on the bottom right corner of the menu. costs $850 to paint the truck.
