Run a search for your music files. They should be located in Documents and Settings. They're not actually located in iTunes they're on your hard drive. Same thing for your pictures. Just run a search for them and it should pick them up. After you've found them just move them to the other drive and when you've reinstalled all the programs on your second drive just import the files again.

And yes, in order to change the installation drive path you need to click custom install.
