Moving between drives

Hi, I've recently added a new hard drive as I was running out of space, got that sorted out but I've been told to free up space I need to move files (pictures and music) to new drive and uninstall software and re install it on new drive. My music is on itunes and pictures on kodak easyshare how do I protect my pictures and music when I uninstall the programmes they are contained in? Also how do I choose the drive where the software will load to? Do I need to tick the "custom install" box? Sorry if I sound like a new boy but the first computer I used was an abacus! Thanks for any help.
