Yes, I could populate Disk0 and Disk1. The option to assign a drive letter in Disk Management was still greyed though.
It is strange.

Well, thanks ever so much for your help and support. It gave me a few new avenues to go down that I was unaware of.

I'll keep hacking away at it and I'll post back if I ever manage to get to the bottom of it.
